There are many takedowns that have follow ups into armbars, many of which can be started before the person has actually made it to the ground. I would say your basic judo style hip throw, straight into an armbar follow-up would be your best bet for a few reasons, 1. Its very easy to learn and can be taught to everyone. 2. It is super effective, even when done for your first couple times or against a larger person. 3. Everybody loves the armbar and there is actually very little risk involved in attempting and even failing this knee-in-ribs variation. Simply hip throw them close, right under your feet from the overhook/underhook neutral position (or tricept/belt grips). Right as he is landing place your knee in the ribs like your kneeling on him, use the tricept grip to pull his arm up close to your hips for a good armbar, and put your leg over the head, lean back and finish.
The kimura is another great, basic technique. It can be finished from standing, used for a takedown, used for a sweep, or finished from just about any position on the ground.
